2 cups sugar
1 cup vegetable oil
4 large eggs, room temperature
3 cups grated carrots
1 1/2 cups chopped walnuts or pecans toasted and divided ((optional))
2 (8-ounce) packages cream cheese, softened
1/2 cup butter, softened
1 (16-ounce) package powdered sugar ((about 4 cups))
1 teaspoon vanilla extract
