Pattie's Kicked Up Southern Caviar

Another recipe given to me by my mother. This is my "go to" dish for parties and gatherings, and it's lower in fat than most Texas caviar recipes. The hardest part is trying not to devour it before serving to guests!

Ingredients

DRESSING

1/2 c
red wine vinegar
1/2 c
balsamic vinegar
1/2 c
olive oil, extra virgin
1/2 c
splenda, or sugar
1 tsp
kosher salt
1 tsp
black pepper
1 Tbsp
dijon mustard

CAVIAR

1 can(s)
mexicorn, drained
1 can(s)
rotele, drained
1 can(s)
black eyed peas, rinsed and drained
1 can(s)
black beans, rinsed and drained

medium yellow bell pepper, diced
1
medium red bell pepper, diced
1
medium green bell pepper, diced
1
red onion, diced
1
cucumber, peeled and diced

Directions Step-By-Step

Mix all dressing ingredients well and set aside

In a separate bowl, mix all caviar ingredients

Pour dressing over caviar and refrigerate in an air-tight container for at least an hour or two.

Serve with tortilla chips, Fritos, or crackers, enjoy!
