Angie's Story

This is a great party dip, and a good way to serve black-eyed peas during a New-Years celebration!

2 can(s)
black-eyed peas
2 can(s)
white shoepeg corn or southwestern corn
1 large
1 large
green pepper
1 large
red pepper
1 large
yellow pepper
1 large
orange pepper
1 large
purple onion
1 Tbsp
greek or italian seasoning (your taste)
1 bottle
italian dressing

Directions Step-By-Step

Rinse and drain peas and corn; place in large bowl. Dice vegetables; add. Add seasoning, salt and pepper and bottle of salad dressing. Stir til well combined.
This is best if made the day before and refrigerator to allow the flavors to blend. Serve with Tortilla chips or crackers.
You can make this your own by adding anything to your liking. If I have cilantro on hand; it usually goes in.

This looks really yummy. I would also make this and use it as a salsa or relish for chicken or steak or as a topping for tacos.
