The addition of cayenne pepper in this recipe makes these onion rings a little spicier than traditional ones. If you don't like spicy foods, eliminate the cayenne. Vidalia onions are the best, but you can also try other brands. Just as long as they say "sweet" on them. I wouldn't suggest just using any other kinds like yellow or purple. Not sure of what the taste would be.

Ingredients For fried onion rings

    large sweet onions (vidalia is the best)
  • 1
    egg
  • 2/3 c
    water
  • 1 Tbsp
    vegetable oil
  • 1 tsp
    lemon juice
  • 1 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 1 to 1 1/4 tsp
    salt
  • 1/8 to 1/4 tsp
    cayenne pepper
  • oil for deep-fat frying

How To Make fried onion rings

    Cut onions into 1/2" slices; separate into rings. Place in a bowl; cover with ice water and soak for 30 minutes.

    In a bowl, beat egg, water, oil and lemon juice. Combine flour, baking powder, salt and cayenne; stir into egg mixture until smooth.

    Drain onion rings; dip into batter. In an electric skillet or deep-fat fryer, heat 1" of oil to 375 degrees. Fry onion rings, a few at a time, for 1 to 1-1/2 minutes on each side or until golden brown. Drain on paper towels.
