Ingredients

1 c
shredded carrots
1 pkg
light cream cheese, softened
1 c
(4 ounces) shredded low fat cheddar cheese
1 tsp
instant minced onion
1 c
finely chopped broccoli
assorted crackers

Directions Step-By-Step

Press carrots between paper towels to remove excess moiosture; set aside.

In a large bowl, blend cheeses and onion.
Stir in carrots and broccoli; combine thoroughly.
Cover with plastic wrap.
Refrigerate at least two hours.

Shape mixture into a ball.
Wrap with plastic wrap
Chill until ball holds it's shape.
Remove wrap and serve with assorted crackers
