2die4 Pesto Filet Mignon Potato Skins

- 1 lb
- filet mignon, grilled and sliced
- 6 large
- idaho potato skins, baked & scooped
- 3-4 oz
- parmigiano-reggiano, grated or reggianito
- 6 tsp
- chimichurri or pesto
- 1 tsp
- course black pepper**optional**
1assemble a lil' cheese, steak slices, more cheese cheese and pesto equally on 6 potato skins.
2preheat oven broiler. broil on middle oven rack for 1 minute or until cheese melts. enjoy!
