Split jalapeno peppers and remove seeds (can leave a few for heat). Cut chicken into pieces that will fit into the peppers. Place piece of boneless chicken seasoned with the creole seasoning in the peppers. Wrap each pepper half with one strip of bacon. Place peppers in pan, sprinkle with more creole seasoning. Bake or grill for about 30 - 40 minutes - can leave under broiler for about 2-3 minutes to crisp the bacon. Serve with ranch dip or dressing.
