I apologize for not having measurements again, but I've cooked this way for so long. So I guess I'll have to refer to them as my "Off the Cuff" recipes

Ingredients

1 large
can white meat chicken drained & shredded
minced green onion, sweet onion or shallot
mayonnaise
curry powder
salt & pepper
add any of the following or combination thereof:
dried apricots, mango, papaya, cranberry, pineapple, raisins golden or brown, fresh chopped apple, pear, etc.
toasted chopped almonds, macadamias, pecans, walnuts, pinenuts, etc.

Step-By-Step

1Mix all ingredients together, add small amounts & taste as you go to see what you want more of.

2This is a great filling for appetizers or tea sandwiches. Use mini filo shells, mini pita pockets, wheat or white crustless bread triangles ( must use a dense bread though such as Pepperidge Farm )toasted or not, mini cream puff shells, etc.
