This is more of an idea than an actual recipe. The thought of doing this had been rolling around in my head for sometime, so when Potato Salad was finally on our menu, I just had to try these. And let me tell you, they flew off the platter!
Prepare your eggs as you normally would for deviled eggs. I cooked extra to put into my potato salad, and also added all the hard boiled yolks from the deviled eggs into the salad as well. I had lots of potato salad leftover and simply served it as a side dish.
