Deviled Eggs San Antonio Style

I wanted something different this Easter so I'm making these eggs for our celebration.

Ingredients

6 large
hard boiled eggs
1 medium
avocado
1 tsp
minced onion
3 tsp
fresh lime juice
1 Tbsp
minced jalapeno
1 Tbsp
chopped fresh cilantro
1 Tbsp
diced tomato, i use roma tomatoes
pinch
chili powder
to taste
kosher salt
to taste
fresh ground black pepper

Step-By-Step

1Peel, pit and mash the avocado.

2Slice each egg in half horizontally. Set aside the yolks.

3In a medium bowl, combine avocado, egg yolks, red onion, jalapeno, cilantro, lime juice and diced tomatoes.

4Season with salt and pepper.

5Spoon the mixture evenly into the egg halves.

6Sprinkle with the chili powder.
