Ingredients

1 lb
boneless skinless chicken thighs cut into small chunks
3 Tbsp
fish sauce
2 small
shallots rough chop
4 clove
garlic
1 stalk(s)
lemongrass white inner bulb only rough chop
1/3 c
cilantro plus more for garnish
1 1/2 tsp
cornstarch
1/2 tsp
salt and pepper
1/2 c
sugar
1 bottle
sweet chili sauce

Step-By-Step

1Add all ingredients except sugar and sweet chili sauce to large food processor. Process until mixed well.
2Preheat oven 400 degrees. Line a rimmed baking sheet with parchment paper. Pour sugar onto a plate. Moisten hands and roll chicken mixture into 1 to 1/2 inch balls. Roll in sugar and place on baking sheet.
3Bake for 15 minutes until they are browned and cooked through. Serve drizzled with sweet chili sauce and cilantro
