Summertime Fruit Plate

Annalisa Keene

I have taken this to potlucks, parties, banquets, and such for years. It's always a big hit, especially with kids. The fruits I have listed here are just a suggestion. Almost any fruit will work as long as it is cut in bite size chunks. Just remember to soak any thing like apples and pears in the pineapple juice to prevent browning of fruit. Bananas work too,as long as they are cut just before serving and put in pineapple juice first.

fresh strawberries
fresh pineapple
1 can(s)
pineapple juice

Directions Step-By-Step

Wash all fruit well with water. Core and chunk apples and soak in pineapple juice to prevent browning. Top strawberries and slice larger ones to bite size chunks. Core and chunk pineapple, and de-stem grapes. Arrange in groups around the outside of a serving platter (I use a large cake platter). Set in refrigerator to chill.
Allow Strawberry cream cheese to soften. Mix marshmallow cream and strawberry cream cheese in a medium bowl until well blended. Place in decorative bowl in center of platter. chill if desired.
