2 jalapeno chiles, seeded and minced
1 tbsp. butter
2 tbsp. cider vinegar
1 jar raspberry preserves 12 oz
20 slices white bread
1 wheel brie cheese, 10 oz., chopped
chopped fresh chives for garnish

Directions Step-By-Step

Sauté jalapeno chiles in butter in small pan until tender. Add cider vinegar and preserves and mix well. Bring to a simmer and cook for 5 minutes, stirring to prevent scorching. Roll bread very flat and cut into rounds with a fluted 3 inch cutter. Press rounds into greased muffin cups. Bake at 350 for 8 to 10 minutes or until toasted. Cool completely. Reduce oven temperature to 300. Fill bread cups with Brie cheese and top each with 1/2 teaspoon or more of the preserves mixture. Bake at 300 for 10 minutes or until cheese melts. Garnish with chopped chives.
