Beef-filled ripe Plantains/Canoas
very ripe plantains
cooked ground beef
grated cheddar or mozarella cheese
2Peel the plantains carefully to make sure they do not break. You need whole plantains and appearance is quite important in this dish.
3Preheat the oven to 350 degrees. While the oven preheats fry the plantains in enough oil to cover them. Be careful while handling so that plantains do not break.
5Slit each plantain lengthwise, about an inch from each end, half as deep as the plantain's circumference.

Looking at the picture it doesn't appear the plantains were peeled. Is there a reason for that?

No, I think that was just done for the picture. You do have to peel them in order to fry them. I just place them in an ovenproof dish. (lol maybe I should change the picture)
