Mexican Fudge

This is a great and easy appetizer that is addicting! If you like the cheese that runs off a pizza or grilled cheese sandwich that gets browned then you will love this!

Ingredients

2 c
shredded cheddar
2 c
shredded monteray jack
6
eggs
8 oz
hot or mild taco sauce

Directions Step-By-Step

Mix all cheese together. Spread 1/2 of the cheese mixture into the bottom of an ungreased 9 x 13 inch pan. Beat eggs, add the taco sauce to this, and stir again. Pour this egg mixture over the first layer of cheese. Then put the other 1/2 of the cheese on top of the egg mixture. Bake at 350 degrees for 1/2 to 3/4 hour. Cool for 5 minutes and cut into square serving pieces.

I think I messed up yours look just like fudge and mine only cooked 30 minutes any longer and it would have burnt. But I have a really old stove that heats up at a higher temp and so I have to cook at 325 if it calls for 350. I was excited that it tastes yummy cold too. I think i may even like it more cold than warm. But either is yummy.

You know I just thought of it.....I think I waited till mine was cool before I cut it....maybe that is why mine looks more solid.

No yours looks good too Kim. Actually looks more like my hubby would eat it- all browned on top! I use a glass dish for mine too.
