If you use Greek yogurt you’ll still want to drain it as there is still liquid even if it’s just a wee bit.

And when zesting the lemon make sure you don’t get any of the white part.... “ pith “ as that will make it bitter

The consistency of the cheese will seem strange but the taste will be amazing…

This is amazing with fruit, and ginger snap cookies….lemon and ginger is really good together

8 ounces of plain yogurt drained in cheese cloth or coffee filter in the refrigerator over night
1 - 3.4 ounces instant lemon pudding
zest of one lemon
juice from two lemons
ginger snaps

Directions Step-By-Step

Place yogurt in cheese cloth or in a coffee filter with a strainer over a bowl and drain over night in the refrigerator.
The next day mix the “cheese” yogurt with the pudding lemon juice, zest with a mixer and mix well.
Put into a small enough container to mold it and to make it look nice. Put into the refrigerator to get cold.
Plate it and just before you serve, top with some crushed ginger cookies.
