Ingredients

1/4 c
sliced green olives with pimentos
1/4 c
garbanzo beans
1/4 c
chopped artichoke hearts
2 Tbsp
chopped sun dried tomatoes
1/4 c
kidney beans
1/2 c
good quality red wine vinnegarette with olive oil
12
mini colored sweet peppers

Directions Step-By-Step

Marinate at least one day in refrigerator

Slice peppers lengthwise and seed. Fill peppers with veggies to create boats. Serve.
