This is a great appetizer. The shrimp can be served on a frilly toothpick or arranged on lettuce leaf base on platter. This is a best made ahead and refrigerated overnight. Picture is just cooked shrimp, and not finished recipe.

Ingredients

1 1/2 lb
raw medium shrimp, shelled and deveined
1/2 c
picante sauce
1/3 c
small pimento stuffed olives, drained
2 Tbsp
vegatable oil
1 Tbsp
capers, drained

Directions Step-By-Step

Place shrimp in boiling water; simmer 2-3 minutes. Drain. Combine shrimp with all the other ingredients and toss. Place shrimp in sealed container and refrigerate at least 4 hours or up to 24 hours, turning occasionally.
