Ingredients
- FOR THE MANGO SALSA
- 1 cup brown sugar
- 4 teaspoons distilled white vinegar
- 2 - star anise
- 2 - mangos, peeled and pitted
- FOR THE TARTAR
- 18 ounces salmon fillet, cut into small squares
- 4 - red onions, chopped
- 4 - sour pickles, very finely chopped
- 3 ounces capers
- 4 tablespoons mayonnaise
- 8 teaspoons dark rum
- 2 tablespoons dijon mustard
- 12 dashes worcestershire sauce
- 8 dashes tabasco sauce
- 1 teaspoon kosher salt
- - freshly ground black pepper, to taste
- 8 - quail egg yolks
How To Make salmon tartar with mango salsa

Step 1For the mango salsa make a syrup by boiling the brown sugar, 1/2 cup water, vinegar and star anise for 3 minutes.

Step 2Stain and process in a blender with the mango. Set aside.

Step 3For the tartar, combine the salmon, onions and pickles in a medium bowl. Add the remaining ingredients and mix.

Step 4To serve, place some of the tartar inside a circular mold on a plate.

Step 5Make a small indentation in the center of each tartar circle and top with a quail egg yolk.

Step 6Spoon some of the mango salsa on the side of the plate.
