This is not your ordinary shrimp cocktail. Made with salsa, avocados and a touch of lime, it is deliciously different. It's a quick and easy appetizer or lunch entree and is sure to please!

Ingredients

1/2 medium
avocado
1/2 Tbsp
lime juice
1/2 to 2/3 c
picante sauce or salsa, chunky (your favorite)
10 medium
or 7 large shrimp, cooked peeled & deveined

Directions Step-By-Step

Choose your serving bowls, wine or Margarita glasses or goblets.

Dice avocado; sprinkle with lime juice.

Pour salsa into bowl or glass that will be used to serve.

Top with diced avocado (sometimes I reserve 1 slice for garnish, as pictured.)

Arrange shrimp to hang over rim of bowl or glass. (Note: May be served with shrimp, cut into bite-size pieces, mixed into the salsa, also. Makes eating it less "messy.")

Serve immediately or cover and refrigerate until served (do not make ahead more than an hour or two.)
