This is such a great twist on a classic. I made this and think I will be making egg salad like this for now on. Every flavor pops in this simple recipe.

Ingredients

1/3 c
mayonnaise
1 Tbsp
fresh lime juice
11/2 tsp
curry powder
1 tsp
dijon mustard
1/4 tsp
salt
1 pinch
cayenne pepper
6
hard boiled eggs
1 c
finely chopped granny smith apple
1/3 c
finely chopped red onion
2 Tbsp
chopped fresh cilantro (or more)

Directions Step-By-Step

Whisk together first 6 ingredients in bowl.

Dice eggs, apples, and onion about same size. Chopped cilantro and add all to Mayo mix, stir to combine. Serve on Your favorite bread. I served open face with another pinch of pepper, for a lite lunch. Also is a great app!
