Queso Fundido, or melted cheese, when spooned down the middle of a soft warm flour tortillas, is a little bit of heaven. The dish can be enhanced with the addition of cooked Chorizo, or sautéed mushrooms, but it definitely stands on its own. It can also be prepared in one larger shallow ovenproof dish Right before serving, drizzle a little sherry over the top and flame. You then have Queso Flameado, equally delicious and with a little show. Source: unknown
