I tried this cheesecake and was very disappointed. First of all it was not the color of the pictured pie and after leaving the cream cheese out to soften 3 1/2 hours ( 2 suggested), it was still lumpy. Taste is good but like I said lumpy:(

We really enjoyed this pie for dessert last night. I whipped the mixture thoroughly on the high speed of my electric mixer before adding the lemon juice and had no problem with lumps of cream cheese. It has a very smooth, silky texture, and mounded high in the graham cracker crust. Looked beautiful! I'm only giving it 4 stars because I think it doesn't have enough of a cream cheese taste (I love cream cheese). I'm going to try making it with less Cool Whip next time.
