SWEET POTATO HAUPIA PIE

| 3/4 c | cold, unsalted butter (1 1/2 sticks) |
| 2 Tbsp | sugar |
| 1 3/4 c | flour |
| 1 c | macadamia buts, well chopped |
| SWEET POTATO LAYER | |
| enough okinawam potatoes to make 2 cups | |
| mashed | |

| 1/2 c | butter, softened |
| 1 c | sugar |
| 2 | eggs, beaten |
| 2 c | okinawan sweet potatoes, mashed |
| 1/2 c | evaporated milk |
| 1 tsp | vanilla extract |
| 1/4 tsp | salt |
| HAUPIA LAYER: | |
| 1 can(s) | coconut milk (13.5 oz.) |
| 1/2 c | water |
| 1/3 c | sugar |
| 1/3 c | cornstarch |

Directions
CRUST: Mix the dry ingredients together in a medium size bowl. Add the chopped nuts and the butter. Cut the mixture with two butter knives, pulling them across each other in a scissor motion until the crust mixture is crumbly and no large butter chunks remain.Press the crust mixture onto the bottom of a pie pan, continuing up the sides of the pan. Place the pan in the refrigerator.SWEET POTATO LAYER: In a medium bowl, cream the butter and sugar together until smooth and creamy. Add egg one at a time, mixing after adding each egg. Add half of the sweet potatoes, mixing thoroughly. Add the other half and mix again. Mix in the evaporated milk, vanilla and salt.Spread the sweet potato mixture into the pie crust, do not add too much, it should fill the pie crust no higher than 1/2 an inch from the top edge of the crust so that we have room for the haupia layer.Bake the pie at 350 degrees for 30 minutes or until the edge of the crust is golden and the potato filling is lightly browning in spots.HAUPIA LAYER: When the cooked pie has cooled. Begin preparing the haupia layer. You do not want to start preparing the haupia too early or it will solidify.Place the coconut milk and the water in a saucepan, but do not turn on the heat just yet. Mix together the sugar and cornstarch in a small bowl then add it to the liquids. Turn the heat on to medium, stirring constantly, until it thickens.Immediately pour the haupia mixture over the sweet potato layer and return the pie to the refrigerator to chill for several hours.

yes i'm originally from maui...went to UH..who doesn't love Oahu?? hehehe my husband is in military and so we got stationed here four years to go..it's been tough especially adjusting to a whole new culture and no foods that are even close to home ones..I soo miss manapua..i just made chicken curry for dinner tonight :)

Oh Lynn, I guess you're homesick for the wonderful "foods". I have plans to post a Shrimp Curry dish and also will be posting a lot of local island flair type recipes. Many members are requesting and are very interested in our "foods" here in Hawaii. I think I have a manapua recipe, I need to hunt for it, probably. As I stated in other comments to the ladies, I have a vast collection of recipes, many that I haven't even tried, but looks so good that I want the recipe anyway. I guess you could say that it's an obsession of mine. I also just recently as last week, found a large seal container of my mom's cookbooks and handwritten recipes, it made me cry! Yes i am definitly homesick for the food, family, and friends.. I love old cookbooks and mom's special recipes. When I get stuck i call my mom for help. I need to write down how she makes her kimchee and japanese dishes.. it's harder cause my husband and son doesn't really like to eat nishime :) lol. but my husband asked for chicken katsu. I would lovvvveee if you could teach me how to make baked manapua. my family prefers the baked to the steam..they are both ono! thank you for letting me join your group!!!

AWWW, Lynn, I will try to help you ease some of the homesick feeling that you have, at least for the food part! LOL And Nishime is my favorite New Year's food. I don't have a recipe for it because I cook it be eye, taste and feel of the ingredients. If you like, I could break down the recipe. A lot of what I cook at home doesn't have a recipe and I've started to write them down because of the request I am getting here at this site. And you are very welcome. You can also join the other groups, they have many that you can choose from. Well back to my hunt for that recipe of baked manapua! LOL XOXOXOX Jo
