Ingredients
| 1 lg | onion,chopped |
| 4 Tbsp | butter (1/2 stick) |
| 3 c | cooked squash, drained with all water squeezed out |
| 1 c | crushed ritz crackers, plus additional for topping |
| 1/2 c | sour cream |
| 1 tsp | house seasoning |
| 1 c | grated cheddar cheese |

My cousin made this one time and I fell in love with it ever since. She never gave me the recipe but luckily I found it.

Directions
Preheat oven to 350. Saute onion in butter for 5 minutes. Remove from pan and mix all ingredients together. Pour into buttered casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes.
Variation: For a different taste to this casserole, layer slices of cooked red potatoes in the bottom of the casserole dish, followed by squash mixture, repeat layers. Top with about 1 cup Ritz crumbs tossed with melted butter.

By house seasoning do you mean what Paula Deen uses? I think its salt pepper and onion or garlic.

Yeah....I actually got it from her book. Made it one time for a potluck dinner.....lets just say it was completely gone. I have the recipe for that as well on here too.

Lost my favorite recipe for squash casserole and I have two days till Thanksgiving day. This one is very close to what I remember. Anyway it sounds great and I can't wait to try it. Any yes it was Miss Paula's recipe I lost so this is great. Thanks for posting this one.

I made this for Thanksgiving at my Mom and it was great. My whole family brings dishes to contribute to the meal so that Mom doesn't have all the cooking to do. After the meal we all divide up the leftovers so we will have a complete meal for supper when we get home that night. The first comment that I heard when it was time to do this was " I want some of the squash ". Thanks for sharing. I have a new favorite.
