JANE's Notes:
If you need to make alot of eggs for everyone but don't have the time each morning, here's an Amish woman's way of doing it. These are also good for making a homemade "Egg McMuffin". If you like egg salad but don't like to peel eggs, use this method of egg cooking.
If you need to make alot of eggs for everyone but don't have the time each morning, here's an Amish woman's way of doing it. These are also good for making a homemade "Egg McMuffin". If you like egg salad but don't like to peel eggs, use this method of egg cooking.
Directions
Spray a muffin tin with cooking spray. Place a dab (about 1/2teaspooon)of butter in the bottom of each cup. Now break an egg in each cup. Sprinkle a little pepper on each of them. Bake in 400 degree preheated oven for 10 minutes or until your eggs are done as you like them. Bake a little longer if you are going to make egg salad out of them. Serve immediately.
TIPS: For a change of taste, or when I let the kids make their own eggs,I add one piece of pepperoni, or some bacon bits,or 1 tablespoon salsa, or a pinch of shredded cheese in the butter before cracking the egg in the cup for added flavor. Also, I use a knife to unloose the egg easily from the muffin cup.
