CRUST
2 c all purpose flour
1 c butter softened (no substituting)
1/2 c powdered sugar
FILLING
4 eggs (slightly beaten)
2 c sugar
4 Tbsp flour
6 Tbsp lemon juice (i use bottled)
FROSTING
1/2 c butter (softened)
1 c powdered sugar
1 tsp milk
2 Tbsp cold water

STOP!!! don't pass this recipe by. lemon lover or not these bars are SO melt in your mouth you'll want to eat the whole pan. I have had this recipe for years. Everyone loves them and I hope you will to! 3 sticks of butter in these bars. what else is there to say! enjoy

Ann set high expectations for these lemon bars... and they turned every bit as good as she said! Perfectly sweet and tart, these creamy bar are a perfect after-dinner or brunch treat.

 

Directions

MIX CRUST INGRED. WITH FORK AS YOU WOULD FOR A PIE CRUST. PAT INTO A 9X13 PAN WHICH HAS BEEN GREASED AND FLOURED. BAKE AT 350 DEGREES FOR 15 MINUTES.

AS CRUST IS BAKING. MIX FILLING. AFTER CRUST HAS BAKED 15 MINUTES, POUR FILLING OVER CRUST AND CONTINUE BAKING FOR 25 MINUTES. COOL BARS COMPLETELY

MAKE FROSTING BY BEATING BUTTER,POWDERED SUGAR AND MILK FOR 6 TO 8 MINUTES ON HIGH SPEED. THEN ADD 2 TBLSP. COLD WATER ONE AT A TIME. BEAT UNTIL SMOOTH. SPREAD OVER COOLED BARS.

This looks so yummy! I think kids and I will be attemping this tomorrow as we have no school because of the icky weather :( calling for like 22+ inches of snow!!!!

teri you will LOVE these lemon bars!!!! so will the kids. I see your really getting hit with a blizzard. Don't know what the heck is going on with this weather!! kinda scary!!! we have a ton of snow up here in northern Minnesota!!! we won't see the grass till august if this keeps up!!haha. let me know how you like the bars!

I made these last night and I think they are really good but I think next time I will go with my instinct and substitute some of the water in the frosting with Lemon Extract. I think the frosting needs a little kick. Still, these are delicious and everyone at my house gave them the double thumbs up.
