Ingredients

2 lb cauliflower, small florets (cooked and drained)
1/2 stick butter
1/2 c heavy whipping cream
2 tsp garlic powder
1/2 Tbsp parsley, minced
1 c parmesan cheese
1/2 c cream cheese
salt and pepper to taste

About a year ago when our daughter came to stay while her husband was in Korea...I was fixing dinner and I wanted to fix Cauliflower...Which my daughter didn't want to eat...I decided I would fix it anyway instead of potatoes...I would mash Cauliflower and put Parmesan Cheese in it...Well I didn't tell her that it was Cauliflower though consistency does not look the same...She loved it...The only other way she will eat it is if we make a white cheese sauce to pour over the florets...

 

Directions

Boil Cauliflower in a medium pot with a pinch of salt and 3/4 C water...When tender by sticking a fork into it approximately 20 minutes...Drain well...

Add the butter, heavy whipping cream, cream cheese, garlic powder, salt and pepper to taste. Mash with a potato masher. Add cheese on low medium heat till cheese is mixed in well. Then stir in Parsley...You may have some liquid separation..that is normal...just stir again...(use slotted spoon to serve)...Serve immediately

Oh JoSele, this is one of my favorites! I wonder if I could fool the hubby into thinking they are potatoes? HA! Most likely not but I sure will be making this. Just Got my Jap apron, and I am wearing it to keep my legs warm.

Member since May 201, so it does take a while. It is very good quality, just wish it wasn't stark White!

You could get some Ritz dye and change the color...Ya they said 6 to 8 wks.....I was hoping that I would get it earlier though......

Thats a great Idea, I think the first time I get mustard or tomato sauce on it it won't look so good. It is 100% cotton, so it would take the dye well. thanks.

I just thought I would try it out...I haven't had one in for ever..I hav used dish towels or nothing....It is sooooo nice to have one again...

My Mom got be one that looks like a black tux with a red bow tie and a white shirt. I should change my pic with that one. Then I have a retro on of hers from the 50's it has pink poodles on it with a matching dish towel, I also have a nice denim one, but I never wear them. If I ever have a catering gig again, I have chefs pants and the jacket, with the Dansko's.:) I think since it is 100% cotton, I can get any stain out so I may not dye it.
