2 bx	jiffy raspberry muffin mix
1/2 tsp	baking soda
4-oz	cream cheese, room temperature

2	eggs
1 1/2 c	white chocolate chips

Lauren's Notes:
This is my copycat recipe of Subways Raspberry Cheesecake Cookies. I think they are pretty close but I'm still perfecting it.

With a light, soft texture and delightfully sweet flavor, these cookies are dangerous - It's impossible to eat just one!

Directions

Preheat oven to 350.

Combine the jiffy mix and baking soda in a small bowl and set aside.

Cream together cream cheese, butter and sugar. Add eggs one at a time until blended.

Combine the dry mixture with the butter mixture, fold in the white chocolate chips. Chill 1-2 hours.

On a greased baking sheet place tablespoonfuls of dough 2 inches apart and bake about 10 minutes or until just turning golden around the edges. Cool and serve.

I guess I never knew Subway had a rasberry cheesecake cookie?!?! They sound very good, I will try to gather the ingredients and give 'em a whirl! :) Only problem is, I can't tell ya if they're similar to Subways....

i made these this afternoon. i left out the sugar. they were good and texture was different than i expected. cake like and very tender.

I thought the sugar would make them more chewy and sweeten the cream cheese a little. I'm glad you liked them. I'm thinking maybe I should leave out the baking soda to change the texture a bit.

I started with this recipe but sifted out the hard raspberry bits from the muffin mix and used raspberry pie filling. After I spooned out the cookies I used my pastry bag with the skinny fitting to pipe little pockets in the cookies. worked great.
