This is my copycat recipe of Subway's Raspberry Cheesecake Cookies. I think they are pretty close.

Blue Ribbon Recipe

With a light, soft texture and delightfully sweet flavor, it's impossible to eat just one of these raspberry cheesecake cookies. They're easy to make with pantry ingredients. Using a boxed muffin mix cuts down on the ingredients needed. The raspberry bits add a nice fruit flavor and pair nicely with the white chocolate chips. Soft and chewy, these simple cookies are perfect when you want a slightly richer treat.

Ingredients

  • 2 boxes Jiffy raspberry muffin mix
  • 1/2 teaspoon baking soda
  • 4 ounces cream cheese, room temperature
  • 1 stick unsalted butter, room temperature
  • 1/4 cup brown sugar, firmly packed
  • 2 large eggs, room temperature
  • 1 1/2 cups white chocolate chips

  • Preheat oven to 350 degrees F.

    Bake about 10 minutes or until just turning golden around the edges. Cool and serve.
