Ingredients

4 lg eggs, beaten
1/2 stk butter, melted

1 3/4 c sugar
1/2 c flour
1/4 tsp salt
1 tsp vanilla (cap full)
1/2 Tbsp baking powder
2 c milk
1 1/2 c coconut

JoSele's Notes:
This is a great pie, Mix everything in one bowl. It makes its own crust. We really enjoy coconut in this house. It is like eating custard pie.
 
 

Directions

Preheat oven to 350* Bake for 50 minutes

Add melted butter, beaten eggs, sugar, flour, salt, baking powder, milk. Beat until well blended.

Stir in coconut and vanilla, pour into ungreased pie pan, use deep dish for one pie or you may pour into 2 regular pie pans. You may use a brownie pan also. Bake 50 minutes or when toothpick inserted comes out clean. Remove and let cool, pie will,set, like a custard with crust. Yummmmmy

I am gonna try this one , I love coconut and will eat anything that has coconut in it , my kids not so much but I constantly try new coconut recipes on them to see if I can find one they really like.....I have managed to gain one coconut lover over the past year with coconut cream pie :)

I am Jodie, when I was growing up my cousins couldn't pronounce my name so they called me Jodie.. My son didn't eat all his desert, because he was in a hurry so I am eating it, yummmmmmmm....

My husband wanted me to cut it in half so he could have his portion. I told him that by the time he finished it he would be absolutely sick. It is rich.................Plus we wanted some for today....HAHA

I used this recipe for a labor day party. I added two bananas and used rum extract instead of vanilla. There were no leftovers!!!
