Ingredients
| 5 | potatoes, sliced thick with skin on |
| 5 | slices of bacon |
| 1 c | cheddar cheese, shredded |
| 4 | pickled jalapenos, sliced - (jar) |
| 1/4 | sweet onion, chopped |
| 1 1/2 Tbsp | seasoned salt |
| 3/4 c | corned beef, cooked and chopped |
| vegetable oil, for frying | |
| TOPPINGS (optional): | |
| sour cream | |
| green onions, sliced | |
| tomatoes, chopped | |
| salsa | |
| additional jalapenos |

Directions
Fry potato slices in vegetable oil until golden & tender; drain paper toweling and sprinkle with seasoned salt.Cook bacon until crispy, then remove and set aside; Add onion to bacon drippings, then cook until transparent and tender.Layer potatoes on the bottom of an 8" or 10” cast iron skillet; add corned beef, crumbled bacon, onion, shredded cheddar cheese and jalapenos in that order.Place under broiler for 10–15 minutes or until hot and delicious.Finish with your choice of toppings and enjoy!

I just boiled a bunch of potatoes with the skins on? (Skins were tough on these winter Idahos.) Why couldn't I just put them on a pizza crock, add the corned beef and bake/broil a bit in the oven. I am not suppose to have lots of fat. I'll give it a try and let you know.

Linda, this ought to be the "Headliner" and at the top of the list of "Appetizers" at that lad Carlos' Cafe the one who serves Mexican food. You know the lad with the Irish surname "O'Kelly. The discussion over them at the table sure wouldn't hurt his business and would make for lively conversation. What's that Irish man doing, serving Mexican food for any way?

Just happened to have leftover corned beef and cabbage when I came upon this recipe and we had these for supper last night! They were terrific! Added the shredded cabbage too. Takes a little while to cook the potatoes but so so worth it! The corned beef, bacon, sour cream, cabbage combination is outstanding!

I made these last night and we just loved them. My husband even said that the flavors really blended together. I'm not one to measure so I used your ingredients, but just added the amount that felt right. It couldn't have been better! My only changes were, I used turkey bacon which doesn't leave dripping. So I just deglazed the pan from frying the potatoes and cooked the onions in that. After I cooked the onion I added the corned beef and cooked it a bit more, just until warm and mixed well with the onion. I also cooked the potatoes with olive oil instead of vegetable oil. The toppings really took this dish over the top. Thank you so much for posting! We will have it again and again.
