These are so easy and so good. These are also gluten free and feeds a crowd. My kids even ate the spinach. Sort of a clever take on green eggs and ham.

Ingredients

12 large
eggs
12 slice
ham, smoked and deli-sliced
1 box
10 oz frozen spinach, thawed and strained
2 c
shredded cheese
2 pinch
salt and pepper

Directions Step-By-Step

Preheat oven to 350

Spray muffin tin with cooking spray

Press a slice of ham into each muffin cup

Evenly distribute spinach between muffins cups

Evenly distribute cheese between muffin cups

Crack 1 egg to each muffin cup

Season with salt and pepper

Bake for 25 min or until done

I usually litely wilt some fresh baby spinach in a sauce pan for eggs benedict. If using fresh spinach should you wilt it first or would it wilt while cooking? If you like your egg whites hard and yolk a little runny any idea how long to cook.

What if you pre-cooked the bacon a bit before adding the other ingredients?
