12 slc ham, smoked and deli-sliced
1 bx 10 oz frozen spinach, thawed and strained
2 c shredded cheese
2 pinch salt and pepper

Heather's Notes:
These are so easy and so good. These are also gluten free and feeds a crowd. My kids even ate the spinach. Sort of a clever take on green eggs and ham.

Directions

Preheat oven to 350

Spray muffin tin with cooking spray

Press a slice of ham into each muffin cup

Evenly distribute spinach between muffins cups

Evenly distribute cheese between muffin cups

Crack 1 egg to each muffin cup

Season with salt and pepper

Bake for 25 min or until done

I can't wait to try this recipe--sounds like a keeper for Christmas morning instead of the traditional quiche, big breakfast or casserole! Thanks! (Also, thought it'd be cute to do for reading Green Eggs and Ham with kids, or April Fools Day or St. Pat's Day. Multi-purpose recipe!!

I can't wait to try this...we're big egg morning folks, and for special treats, I like to make my own open-face McMuffin using Ezekiel bread (sprouted grains) with ham, cheese & egg...your method Heather would feed the whole crew in one fell swoop and no bread to-boot which I really like...thanks for sharing this recipe!

I made this and the taste was good but I like my egg yolks a little runny. So next time I think I will cook it a little less. Other wise it was really yummy!

Ham & eggs is one of my favorite breakfasts, so I was very excited about trying this recipe. I had to make one obvious change, since I am usually making breakfast for one or two people (I made less and put a little water in each of the empty muffin cups), but I also decided to experiment a little based on some of the comments I read here and my own tastes. I found this recipe to be spectacular when I scrambled the egg and then added a little extra cheese during the last 5 minutes of cooking. It brings a whole new meaning to the idea of a ham & cheese omelet. I love it! I can't wait to serve it to my friends!

Could this be made the night before, except for the egg, put sheeting over it and store in frig for the night, then finish in the morning??? Thanks for sharing and all the shared comments also!!!!!

You could prep this the night before. No problem. I have also substituted sliced, quartered tomatoes for the spinach. That also worked well.

I'm going to make this next weekend, serve atop a toasted English muffin and drizzled with Hollandaise! Voila! Easy Eggs Benedict for a crowd!

I love salsa with eggs so I think I will put a spoon of salsa either on top or off to the side--that will also make the presentation more colorful!

Just made these for Sunday brunch after church and my family loved them. Since they don't like eggs sunny side up, I scrambled the egg with a little shredded cheese and poured it over the spinach. Delicious!

I've also sprinkled a little bit of frozen hash browns after the spinach & before the cheese-WOW! especially with salsa!
