4 medium carrots, sliced
6 sprig(s) fresh thyme
1 1/2 bottle guinness (or other good stout beer)
1 pkg frozen pearl onions
1/2 c water
1/2 c flour
1/4 c honey
salt and pepper

My husband who is a professional chef once cooked at an Irish pub this was his recipe for Guinness Beef stew.

This photo is mine and taken with my camera, however, it was set up by a photographer for the Providence Journal, they were doing a story on my husband and I.

We add the honey becasue the Gunniess is bitterso the honey mellows it out. What type of beer do you use?

What ever I have on hand...since we don't drink I buy the cheapest beer to cook with and make my soap with...this happens to be Carling Beer as my step son left it here in September.
It is very good as I am sure yours is....I have been making this a long time and it is always a great winter dish.

I just sent a Guinness Beef Stew recipe to my brother in law who loves Guinness Stout! I think your recipe is easier and I will send it along also, looks good!

Do you dislike beef or just the saturated fat of the beef?? Just curious..I limit eating beef due to my cholesterol level and my husbands too. We keep all recipe servings to 10gms or less of fat. WE lost 15 each so far. We now walk around the block together with our dog. My boys joined a gym. I bought Tia Chi for arthritics and yoga for arthritics. I have RA and OA and must be careful. The weight loss feels good tho..

Donna ...I just don't like beef have not eaten it since I was 12 years old! We don't even buy it when Phil gets a craving he will get it when he is out. So its not a health issue here just a taste and texture thing!

We to have changed our diets over the past year...I've lost 57 pounds so far (with the help of the lap-band!) We are just not eating as much junk, less carbs but mostly portions, portions, portions. I just physically eat that much anymore with the band. Its been the best thing I have ever done for myself!

Malinda, Congratulations!!!!! It is hard work... but well worth it!!! I had the gastric Y bypass... within 4 days after surgery, I was off all diabetic medications! I would do it all over again just to be rid of shots and those huge pills! I lost over 150 pounds so far... I went from a 5X down to a size 7-8 jeans... can't believe it!

Keep up the good work Malinda... you should be so proud of yourself....!!!! xo Colleen
