Gougeres (cheese puffs) with chives

Ingredients
| 1/2 c | water |
| 1/2 c | whole milk |
| 1 pinch | kosher salt |
| 1 stk | unsalted butter |
| 1 c | all purpose flour |
| 1 c | gruyere cheese, shredded (plus extra to sprinkle) |
| kosher salt | |
| freshly ground black pepper | |
| 3 Tbsp | chives, chopped |
| 4 lg | eggs |

Preheat Oven to 375 degrees F

Line one large or two small baking sheets with parchment paper or silpat

In a medium sauce pan combine the water, milk, butter and salt and bring to a boil. Once fully melted dump in all the flour at once and stir it with a wooden spoon until you have a smooth dough. Continue to stir over low heat until it dries out and pulls away from the pan in one mass - about 2-3 minutes. Scrape the dough into a bowl, allow to cool slightly before beating the eggs into the dough, one at a time. Add the cheese, chives, salt & pepper.

Using two tablespoons (dipping in warm water as you go), place tablespoon size mounds onto the baking sheets, two inches apart. Sprinkle with cheese and bake for 20-25 minutes, or until puffed and golden brown. Serve warm!

I think you forgot to say add the eggs after the flour pulls away from the sides of the pan.Add eggs one at a time & beat until incoporated well.Then put onto cookie pan.

Thanks for the recipe! I'm thinking for appetizer, put a thin slice of smoked salmon on top under cheese. Can taste it already!

I'm thinking that this would work well in a muffin pan for the smaller muffins of 24. The foolproof muffins from FoodNetwork are similar and very good so I know these would be also. I am anxious to try these.

do you use wooden spoon when you are beating the eggs in or an electric mixer? I have never made puffs before.

Oh...these look sooo light and crisp! I tried a recipe for cheese puffs once and loved it! I filled them with a seafood dip and served them as horderves.

These look absolutely fantastic! I can't wait to try them. Do you think they would need any adjustments for altitude living. I only live at 5280ft. I've noticed that some recipes from more humid states need adjustment because we are lacking in humidity. Thanks to anyone who knows or can help!!

Kelly, My Mom lives at 11,200 feet and it just seems like it takes longer for anything including boiling water. Try to google it and see if that helps. "High altitude cooking and baking" good luck.

These are perfect if you want to use a piping bag and a large round tip. Pipe a small round ball. All are very uniform and perfect every time.
