I was given this recipe in Culinary School by one of my Professors, and I can't get enough....This is her written biography...'This is my mom's dense, excellent and definitely unhealthy banana nut bread recipe. This is great at parties, but hazardous at home. Use any type of fat in place of the butter, such as shortening or oil. It works with brown or white sugar". I followed the recipe to the exact measurements, and I will have to admit that I almost ate the whole loaf at one sitting. HAZARDOUS!

This made the Test Kitchen smell amazing! The dense, nutty bread is oh-so-moist and will win over even the non-banana lovers in your life.

Ingredients

1 2/3 c
all purpose flour
3/4 tsp
salt
1 3/4 tsp
baking soda
3/4 c
and 4 teaspoons of butter
1 2/3 c
white sugar
1 2/3 c
mashed overripe bananas
3
eggs beaten
3/4 c
and 4 teaspoons chopped walnuts

I've made this recipe for about 3 or 4 years. It is amazing! The loaves do not rise much but that's OK. The flavor is awesome.
2 weeks ago I tried a different recipe so I could have loaves that raised higher!
BAD.IDEA.!! The batter started climbing up the beaters! I knew it was not a good
recipe but still had to finish it! The last of the bread is almost gone.
I will be making this Banana Bread from now on!! Thank you Robin for your recipe!

Best banana bread I've ever made! The third time I made it I added about 1.5 tsp of vanilla. I think it added a little depth to the flavor. I leave the nuts out - my kids aren't big nut fans. People ask me for this recipe after they have some - the best compliment I can get - thank you Robin DuPree :-)
