I made this Easter Sunday this year, it was great. My husband and I both loved it, and had about half leftover so we reheated and had it again the next day. It was just as good the second time around. He's not a fan of cottage cheese, so I didn't tell him it was in there until after he had tried, it. He couldn't tell, just knew it was good! I used fresh red cayenne pepper instead of canned green ones, just because we grow them in the yard, and added about 1/4 cup of organic salsa. We really enjoyed!
