1 pot cheese mashed potato homemade or box. i prefer homemade
2 Tbsp fress basil
1/2 lb cooked crab meat. imitation is fine

PREHEAT OVEN TO 350. PLACE CHICKEN BREAST IN BAKING DISH POOR DRESSING OVER CHICKEN AND BAKE AT 350 FOR 25 MIN

MIX CRAB AND CHEESE MASHED POTATO TOGETHER.

ONCE CHICKEN HAS COOLED MAKE A SLIT IN THE TOP OF THE BREAST BUT MAKE SURE NOT TO CUT THREW THE CHICKEN.

TAKE CRAB AND POTATO MIXTURE AND PUT IT IN THE SLITS OF THE BREAST. SPRINKLE WITH CHEESE AND BAKE FOR ANOTHER 15 MIN.

GARNISH WITH FRESH BASIL.

This is where "men are from mars, women are from venus" actually sets in. I have giggled through this column of comments. I LOVE the way men interpret recipes. Not putting Dustin down in NO WAY but when men tell you how something is made they say it alot differently than women. What's scary, is I had no problem understanding what he meant. I guess I've lived with a man long enough to know their language. ANYWAY, Dustin, this sounds so amazingly good. I am having friends over for a card night and am fixing supper first. They will LOVE this! Thanks for sharing...and keep it up. I'll be putting you on my "favorite Cook" list. I have found that next to Amish women as my pick of great cooks, MEN are next in line.

Jane,you are better at figuring men out, I would still like to know how much potatoes are needed to fill the chicken. Not that I will be eating those Jane, but I am compliling recipes for my new to cooking Daughter in law. Had another good loss today, strayed a little durning our little vacation in Tawas though.

I think you are right Jane about the amount of cheese potatos. If you made to much it sounds like a good dressing type side dish. I know my husband is going to love this one. I can't have white potato so I am going to use celery root in place of the potato. If you haven't tried celery root, please try it so good, just like potato with a hint of celery! Great for diabetics and folks staying away from starch. I got this tip from Suzzan Sommers. Any tips anyone has for deserts a diabetic can have please share. Happy Cooking

There are lots of recipes here for diabetics. They usually start with the words Sugar Free. I also use mashed cauliflower with butter in place of potatoes.

I have never tried the mashed cauliflower, do you just boil the heck out of the cauliflower and mash it?

You boil it until it's fork tender...doesn't take as long as broccoli does. Then use a potato masher and add butter and salt. You can put sour cream or any toppings you'd put in potatoes. It's very good putting bacon bits in it and cheese. In fact, I've mixed up sour cream, 1/2 can cream of chicken soup, bacon bits and 1 cup shredded sharp cheddar in the mashed cauliflower, baked uncovered for 45 minutes until bubbly. My friend uses 1 raw cauliflower and just blanches it until it is just barely cooked. She drains and chops it up and puts it in a baking dish. Adds 1/2 stick butter, 3 Cups sharp shredded cheese, salt and pepper. Covers the cauliflower with milk or buttermilk until it just covers the cauliflower. Bake it for 50-55 minutes uncovered. NOW you have mac and cheese without the pasta... and is healthy for you...it's delicious.
