Ingredients

2 c sugar
1 1/4 c oil
4 large eggs
2 c flour
2 tsp baking soda
1 Tbsp cinnamon
1 tsp salt
3 c grated carrots
1 c chopped walnuts
FROSTING
12 oz powdered sugar
2 3 oz. cream cheese room temp
1 tsp vanilla extract
2 Tbsp butter
2 Tbsp milk
Pinched by floralchick, and 13,524 more.

JANE's Notes:

Again, going back to my vintage recipes that have been in my family for years, I spotted an old recipe from the 40's for carrot cake. It was titled THE BEST CARROT CAKE. Well, I figured it was now the 90's at the time and was sure someone probably had come up with a better recipe since then. I was wrong. To date, I have not tasted better carrot cake ever. It's easy and the outcome is amazing. A great spring cake for Easter dinner and a tradition around here...hide it from the Easter Bunny though.

I bet this would be delicous without the icing! Especially for coffee drinkers. I would have to use splenda because of diabetes. Anyone else substitued slenda in this recipe? Also, is this all purpouse flour?

Yes, this is all purpose flour. Never tried splenda in this one. I don't think splenda would work in this because it calls for 2 cups. Too much splenda tends to give a baked good a bitter taste, I've found. 1 Cup of Splenda is all I'll use at one time. However, maybe honey would work. I DO sometimes serve this without the icing. It's so moist. If you put more milk in the icing you could just "drizzle" icing over the cake. NOTE: If you would like the icing less sweet, use 1 16oz. cream cheese and proceed with the icing recipe. You'll have more of a cream cheese taste. Glad you all like it.

P.S. you said you found it as a 1940's recipe...how fun!...Did you go to a used book store or library to get old recipes?

I buy old cookbooks at garage sales. Estate sales are great ones. This recipe come from a cookbook some organization made up back in the 40's probably for a fundraiser. I find that cookbooks made by actual everyday cooks are so much better than those gourmet or Corporate owned cookbooks. Amish cookbooks are REALLY good, too.

I've been using this same recipe for years except I add coconut & pineapple to it and even rasins, no matter what you do to it it's always the best ever. I even use the same recipe and instead of carrots I use three bananas it's the best. Life Love & Laughter, Bob
