Ingredients For herbed fresh tomato soup

2onions, thinly sliced

1 dashhot pepper sauce

1/4 tsppepper

1/2 tspsalt

1/2 tspsugar

1 Tbspchicken bouillon granules

1 Tbspthyme, dried and crushed

2 tspbasil, dried and crushed

6 oztomato paste
-
6tomatoes, peeled and quartered

2.5 cwater
-
2 Tbspolive oil
-
parsley, fresh and chopped
How To Make herbed fresh tomato soup

1In a large saucepan, cook onion in hot oil until tender; stir in water, tomatoes, tomato paste, basil, thyme, bouillon granules, sugar, salt, pepper and hot pepper sauce.

2Bring to boil, reduce heat; cover and simmer 40 minutes.

3Place about 1/3 of tomato mixture in a blender container or food processor bowl and process until smooth - Or press through food mill.

4Repeat with remaining mixture.

5Reheat half of mixture and serve immediately.

6To freeze, cool the remaining mixture and pour into a 3 cup freezer container seal, label and freeze.

7To serve frozen portion, transfer to medium saucepan; cover and cook over medium heat for 20 - 25 minutes or until heated through, stirring occasionally.

8Sprinkle with parsley before serving.
