Ingredients
- 1 cup all-purpose flour
- 1/2 cup confectioners' sugar
- 5 tablespoons vegetable shortening
- 1 cup sugar
- 2 tablespoons all-purpose flour
- 2 teaspoons lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 x large eggs
- 1/2 cup lemon juice
- GARNISH:
- confectioners' sugar
How To Make lemon squares (crohn's safe)

Step 1Preheat oven to 250 degrees F.

Step 2Combine 1 C flour, confectioners's sugar & shortening. Using a pastry blender or fork, combine until the mixture becomes a coarse meal. Press into bottom of an 11" x 7" greased baking dish. Bake for 20 minutes. Cool completely.

Step 3In a seperate bowl, combine the sugar, 2 tbsp flour, zest, baking powder, salt, eggs & lemon juice; whisk until well blended. Pour over cooled crust.

Step 4Bake an additonal 20 - 25 minutes. Cool on wire rack for 30 minutes. Cut into squares & dust with more confectioners' sugar.
