These are Mexican Drunk Beans from my kitchen. Good with any bar-b-que.

Ingredients For frijoles bororacho's (drunk beans)

  • 3 c
    dried pinto beans
  • 1 lg
    onion
  • 4 slice
    salt pork
  • 3 Tbsp
    bacon drippings
  • 1/2 c
    pickled jalapeno slices
  • 1 1/2 tsp
    black pepper
  • 1 bunch
    fresh cilantro
  • 1 or 2 bottle
    beer

How To Make frijoles bororacho's (drunk beans)

    Soak cleaned pinto beans in cold water in large pot. Make sure water level is 2 inches above beans.

    While beans are soaking, chop onion. Cut salt pork into 1 inch pieces. Or you can leave them whole. Drain sliced jalapeno's and put in a cup.

    After beans are soaked add chopped onions, salt pork, and pepper and bacon drippings. Bring to a boil. After the beans are boiling good, turn down to low. Let them cook for at least an hour and half and then add the jalapeno's(use 1/4 cup or less for those who don't like hot peppers). Add one beer and if extra needed add from other bottle of beer. Let beans cook till soft about 3 to 4 1/2 hours. When almost cooked add fresh chopped cilantro. Serve in bowls or on side of plates with the meal.
