This is a great recipe using sweet potato cut into sticks and fried up in the oven...so good you will want to make plenty.. great anytime of day for any snack or meal..though you would enjoy this internet find.. snack on.

Ingredients For sweet potato snacks

  • 1 lg
    sweet potato or yam, peeled and cut like french fries
  • 1 lg
    egg,beaten
  • 1/2 c
    graham or vanilla wafer crumbs
  • 1/3 c
    cornstarch
  • 1/4 c
    brown sugar
  • 1/4 c
    granulated sugar
  • 1 tsp
    cinnamon
  • 1 tsp
    vanilla extract

How To Make sweet potato snacks

    Heat oven to 375^ and line a cookie sheet with foil or parchment paper heavily sprayed or greased. Set aside.

    In a large bowl, beat egg and vanilla and place potato sticks into the egg mixture and toss to coat evenly. In another bowl, combine all the remaining ingredients. Place a small amount of wet potato sticks into the mixture and dredge evenly.

    Place potato sticks on prepared pan and bake for 30 minutes, then turn over with pancake turner. Bake for another 10- 20 minutes. Remove from oven and remove to serving platter with a spatula. Eat immediately, with or without a dusting of powdered sugar.

    Note: Instead of using fresh sweet potatoes. I used frozen and they worked great. Follow heating directions on bag for temperature-all other direction are the same. Use frozen stick type or waffle type I liked the waffle type best. Making sure to make enough mixture to accommodate the amount of potato pieces you are using. Next time I will coat them more.
