Credit for this recipe has to go to an ex, tho not generally a great cook she was rather famous locally for these. Use this recipe alot, tho is rather stodgy ( High calorie).

Ingredients For crispy roast spuds

4-6medium potatoes ( non mushy variety )

cooking oil, volume depending on size of dish

salt n pepper
How To Make crispy roast spuds

1Peel spuds, cut in half. On curved side cut parallel lines into spuds approx 2/3rds way thru about 2 mm apart all the way across.

2Preheat oven dish of cooking oil at least 1 cm deep in hot oven 200-220 c, place spuds in flat side down first, cook until crispy, n free from bottom of dish turn n cook until all crispy, approx 45 mins - 1 hour. Drain n season.
