Ingredients For avocado and corn salad

6cobs corn husked and cooked

1 1/4 cfinely diced red onion

2limes, juiced and zested
-
1/2 cred pepper and orange pepper [each}

3 lgavocados medium diced

1/4 cfine chopped fresh cilantro
-
1/2 cyour choice of veg or fruit salsa

lemon juice, fresh
-
3/4 cdry cranberries
-
1 csalted pumpkin seeds
How To Make avocado and corn salad

1Cook corn until kernels are tender..let cool then cut the kernels off the cob. Small dice the peppers.

2Soak the cranberries in apple or orange juice for 1/2 hour..dice red onion and place in small bowl and cover with lemon juice let sit for 15 minutes..drain.

3Add all the vegetables and fruit into salad bowl along with the nuts, lime zest and juice and nuts and refrigerate until ready to serve..You can add 1/4 cup of salad dressing of your choice before serving
