Aunt Essie was my grandmother's sister and prided herself on being the most accomplished and up-to-the-minute cook in all the county, at least in her eyes, anyway. She brought this to serve at an afternoon garden club meeting that my mom was hostessing one time. After that, my mom made it sometimes and would occasionally vary the fruit as well as the garnish. I hope you try it and experiment to make it your own. NOTE: Prep time does not include time for the syrup to cool or the freezer time. Photo is borrowed from Taste of Home website

Ingredients For aunt essie's frozen fruit salad

  • 1/2 cup sugar
  • 1/2 cup pineapple juice
  • 1/4 cup fresh lemon juice
  • 1/8 tsp. salt
  • 1 1/3 cups heavy cream
  • 1/2 cup miniature marshmallows
  • 1/2 cup red seedless grapes, cut in half
  • 1/2 cup crushed pineapple, drained
  • 1 medium apples, diced, peeled or not...up to you
  • 1 fresh ripe peach, peeled and chopped
  • 1 small jar maraschino cherries, cut in half
  • 1/2 cup celery, diced
  • butter lettuce, for serving
  • thinly sliced apple (garnish)

How To Make aunt essie's frozen fruit salad

    In a saucepan, combine sugar, pineapple juice, lemon juice, and salt over medium heat, stirring constantly, until thick. Remove from heat and set aside to completely cool.

    Whip cream to soft peaks, and fold into the cooled syrup mixture. Stir in marshmallows, grapes, pineapple, apple, peach, cherry halves, and celery.

    Spread mixture into an 8" x 8" pan and freeze at least 2 hours. Remove from the freezer 5 minutes before serving.

    Place lettuce leaves on serving plates; cut frozen fruit salad into squares and garnish with two apple slices.
