easy italian casserole

I didn't have anything for dinner the other night and had a package of Italian ground turkey. I search my cupboard and came up with this. It was a hit even with my 5 yr old granddaughter! My daughter even begged for the leftovers for her lunch at work.

Ingredients For easy italian casserole

  • 1 1/2 lb
    ground italian turkey
  • 1 can
    tomatoes, stewed italian-style
  • 1
    large red or yellow pepper, chopped
  • 1 can
    sliced olives
  • 2 c
    cooked mini penne pasta

How To Make easy italian casserole

    Brown the turkey and when it's about half browned add the chopped pepper(s). Cook until turkey shows no pink and the pepper is beginning to soften.

    While the turkey and peppers are cooking, cook the pasta.

    Add the can of olives (I used the water in it, too) and the stewed tomatoes (which I sort of chopped up a bit for smaller bits).

    Drain pasta and add to meat mixture and serve. If you can figure out how much water to use and cook the pasta in the same pot as the meat mixture, that would be great! We really enjoyed this with a salad.
