I was in the mood for a quick and easy dinner that would reheat easily! This fit the bill for my family of three. It was a dinner one night, then meals the next couple of days as we each had a different weekend schedule. A loaf of garlic bread and a big bowl of salad in the fridge were perfect accompaniments!

Ingredients For momma's chile mac

  • 1 1/2 c
    elbow macaroni
  • 1 1/2 lb
    lean ground beef
  • 1/2 c
    chopped onion
  • 1/2 c
    chopped celery
  • 1/2 c
    chopped green pepper
  • 28 oz
    canned chunky tomato sauce
  • 1 tsp
    chile powder
  • 1 tsp
    mexican seasoning (or use taco seasoning)
  • 1 tsp
    garlic powder
  • 1 tsp
    italian seasoning
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper

How To Make momma's chile mac

    In medium saucepan, cook macaroni until just underdone (a bit chewy). Set aside.

    Brown ground beef in large skillet, breaking up into pieces. When browned drain and set aside.

    In same skillet, saute chopped onions, celery, and green pepper until crisp/tender. Add to beef.

    Add seasonings and tomato sauce to the beef and mix thoroughly. Return to heat and continue to simmer another 5-10 minutes or until the flavors have combined and the macaroni is tender.

    Serve with grated cheese, garlic bread and a green vegetable.
