Took some sauce out of the freezer and roasted some vegetables. Rolled up to make these lasagna rolls. Yummo!

Ingredients For roasted veggie lasagna roll ups

12lasagna noodles

8 cspaghetti sauce

ricotta mix (below)

How To Make roasted veggie lasagna roll ups

1ROASTED VEGGIES 1 lg pepper chopped 1 zucchini sliced 1 squash sliced 2c broccoli 8oz sliced mushrooms 1c sliced carrots 4 garlic cloves Drizzel with olive oil s&p and roast veggies in 400 degree oven for 30min.

2RICOTTA MIX 2c ricotta 1 egg 1/4c parmesan cheese 1/4c mozzerella cheese S&P to taste

3Cook lasagna noodles according to package directions. Lay out and begin by spreading each pasta with 1/4 cup ricotta mix, top with roasted veggies.

4Carefully roll each one up and place, seam side down, in baking dish, with sauce on bottom of pan. Top with sauce.

5Cover and bake in 350 oven for 25 minutes, uncover, top with mozzerella and bake another ten minutes.
