I love Chicken Cordon Blue but not the breading on the chicken. This is my version of Cordon Blue done the Weezie way.

Ingredients For weezie's stuffed chicken

4-6thin chicken breasts

1 pkgfrozen chopped spinach

4-6 sliceboars head deli ham
-
1 pkgsliced pepper jack cheese

1-2 cancream of chicken soup
-
1 canmilk
-
salt and pepper to taste
How To Make weezie's stuffed chicken

1Depending on how much gravy you would like...Mix 1-2 cans of Cream of Chicken Soup with Milk. Set aside. Drain the water from Spinach. Cover bottom of baking dish with cream of chicken soup mixture.

2Pound Chicken Breast to flatten, salt and pepper. Stuff Chicken Breast with Pepper Jack Cheese, Ham and Spinach. Roll Chicken Breast and place seam side down in baking dish. Cover chicken with Cream of Chicken Soup mixture. Add any left over Spinach and cheese to the mixture around the chicken. Cook 350 degrees basting occassionally for 1 hour or until done. Serve over Rice.
